Enchiladas! How freakin delicious. So I will start this blog by saying thaT I once attempted making chicken enchiladas a few months ago and I hated them. Mike, of couRse, loved them but I won't even go into my reasons why. So, when I heard a certain *sOmeone* saying they were making enchiLadas for their famiLy I was uber jealous. Said person, graciously, offered to send me the recipe and within 24 hours it was in my inbox. I gathered up all the special yummy ingredIents and Mike and I went to work. The eNchiladas were freakin amazinG. Thank you, Michele and Kevin, for once again saving my dinner catastrophes! Without you and *Kevin's super secret spice*, Mike and I would be hungry many-a-nights!
